Parmesan is a hard, salty and crumbly cheese with an intense flavour and an essential ingredient for many Italian dishes.
Developed 1000 years ago by monks as a way to store excess milk, ours is sourced from one of the oldest dairies in the hills of Modena (Northern Italy). The type of grass eaten by the cows and the high altitude all contribute character. Aged for at least 24 months - much longer than the supermarket equivalents - it develops a distinctive and more intense flavour.
